Zipline's Oatmeal Porter pours a very dark brown color, almost black, capped by a sturdy head of medium brown foam. Porter is a broad style with English origins that's interpreted in a multitude of ways in the present day. This version is decidedly in the "robust porter" camp, featuring a bold profile that's right up our alley. This relatively new addition to the Heavy Seas line-up presents a pretty, bright, golden hue with an ample cap of pale foam that drops to a lasting collar and laces our glasses nicely. We found it quite fruity and inviting in the aroma, with lots of citrus and tropical fruits, touches of melon and stone fruits, and hints of pine. Zipline's Alpha Modern is a somewhat different sort of IPA than we're used to. The brewers set out to craft a low-ABV session IPA without the common pitfalls of a loss of flavor and body. To this end, they've left the beer unfiltered (which has become super popular these days with the "New England" style of IPA) so as not to rob the beer of any heft unnecessarily. They've also added more hops to this brew than any of their others...

Both the 2016 and 2015 bottlings are drinking beautifully at the moment, but we wouldn’t be surprised if these lambic blends developed even more with some additional time in the cellar. While some lambics could go decades, we aren’t super familiar with aging the Lambickx line, which has less than a decade behind it. But these feel primed to just keep on developing. As for pairings: we’re inclined to use that refreshing acidity and CO2 against fattier fare, such as creamier cheeses, turkey, duck, etc. We’ll very likely set aside some of this for Thanksgiving.

The brewery suggests storing bottles of Monk’s Reserve Ale upright, and provides a best-by date about three or four years after bottling. Quadrupels can be amongst the most satisfying of styles to cellar: hefty in ABV, feisty when young, and built to develop some of those most pleasant aged aspects, like sherry notes and complex caramelization. For pairing: the Monk’s Reserve Ale’s emphasis on dark fruit has us looking to heartier pork and duck preparations.
