Originally called Rhombus, this IPA was first brewed at Roadhouse's original brewery in Wilson, WY, hence the new name. Wilson is also a Phish song, hence the lizard on the label, and if that doesn’t make any sense then you’ll just have to check out the song. In any case, we like him! Pouring a bright golden hue with a sturdy, persistent cap of vibrant foam, Wilson unleashes an alluring and inviting aroma. Look for beautifully juicy citrus notes evoking orange and grapefruit, along with touches of melon, floral impressions, tropical fruit, and notes of herbal pine. Those citrus notes come through in a big, luscious way on the palate, too, backed by hints of tropical, stone, and pale berry fruits, with herbal spice tones around the edges. Look for a touch of caramel and a bit of round sweetness in the malt backbone, providing a full-bodied structure for the firm hop bitterness and hint of fruity, spicy alcohol that appears as Wilson comes closer to ambient temperature. The brewery recommends pairing this IPA with spicy Thai food, and we agree; spicy dishes with citrus, basil, and even mint should complement this brew nicely. Cheers!

Roadhouse Brewing Company was founded in 2012 by award-winning homebrewer Colby Cox and noted restaurateur Gavin Fine. Originally from Delaware, Colby's first foray into brewing came working on the bottling line at Dogfish Head, and by 2007 he had begun brewing at home. After deciding it was time to expand his homebrewing into something more commercial, he teamed up with Gavin who was eager to partner. The duo's shared vision was to create exceptional craft beer and build a brewpub boasting synergy between beer and cuisine, with each complementing the other. To that end, they cleared out the billiard room to make way for brewing equipment at Gavin's Q Roadhouse, which formed the foundation for Roadhouse Brewing Company.

In the summer of 2017, Roadhouse expanded their brewing operations into a new state-of-the-art facility featuring a 30-barrel brewing system and the ability to package their beer for retail sales throughout Wyoming and beyond. Not long after, Roadhouse opened an experimental gastropub and brewery in Jackson Hole's historic Town Square. With distribution in Wyoming, Idaho, Colorado, Utah, and Montana, Roadhouse currently produces five year-round brews plus over a dozen seasonals and collaborations. Additionally, they've been awarded B Corporation Certification for their social and environmental initiatives, including support for the Teton County Search and Rescue Organization, the use of heat recapture and solar power, and the provision of spent grain to a local family farm.
